Thermomix Curry Blend Recipe - ThermoFun (1)

Since owning my Thermomix I have enjoyed experimenting with so manydifferent spice blends and this has to be one of my favourites. It is easy tomake, very fragrant and tastes so fresh. With no added anti-caking agents, Inow use this blend every time I make a recipe asking for curry powder.

4 heaped tablespoon - (enough for four curries)

Ingredients

  • 2 tablespoon coriander, seeds
  • 2 tablespoon cumin, seeds
  • 10 cardamom, pods (crush pods and discard outer shells)
  • 1 tablespoon mustard, powder
  • 1 tablespoon turmeric, ground
  • 1 teaspoon cayenne pepper, ground
  • 4 whole cloves
  • 1 curry leaf, dried

Instructions

  1. Place all ingredients into TM bowl and dry roast 15 mins / Varoma / speed 2 / MC off.
  2. Replace MC in TM lid (see notes below) and mill 30 sec / speed 9.
  3. Store in an airtight container away from extremes of heat, light and humidity for up to 1 year.
  4. Shake well before each use.

Notes

WHEN MILLING SPICES:Place baking paper in between your TM bowl & lid to keep spices within bowl.Use this paper to then funnel your spices into small containers.Then use the residual spices in your bowl to make a fragrant coconut milk which can be used immediately or frozen for your next quick curry.

    Wow! I've been using Babas meat curry powder for the last 2 years and finally finished the large bag I had bought so I decided to make Leonie's Curry Blend Spice during the week. It smelled divine and just like the curry powder I was used to using. But now I know exactly what is in my curry blend and I can make a quantity suitable for 6 months use. I used the curry blend last night for your Coriander Chicken Soup recipe and it was perfect! Thank you again Leonie

    Just wondering if I could use yellow mustard seeds in this recipe and either blend them to make mustard powder or just put them in and blitz with the rest? Love this recipe and would like to have one less ingredient in my pantry when I already have the seeds. ?

      Yes Tarryn that would be fine to use seeds as after roasting the whole batch is milled. Enjoy!

    My family do not like hot food. Would it be better to half the cayenne pepper in the spice mix or just use less of the spice mix in whatever recipe I'm cooking?

    Can I use ground cumin seeds as I don't have the ungrounded ones and how much do I use ?

      Curry leaves can be difficult to find at times Chantelle as not all supermarkets have them. You can sub with a few bay leaves.

    Love making this mix and it makes great presents too :-) Today I didn't have any mustard powder so I sub'd in 1/2 Tbsp mustard seeds. The mustard smelt strong while cooking but once ground up it was great. At least this time I had a curry leaf to add.. Lol Love how your recipes are soo tweakable. Thank you :-)

    Hi, we loved this blend. So full of flavour. Thanks for the recipe. I'm planning to make it again & just wondered if I were to make double or triple the recipe, would I need to increase the dry roasting time? Thanks!
