Tender roasted, French Dip Sandwiches cooked in the Instant Pot. Piled on a crusty french roll with extra cheese, this flavorful dinner is then dipped in au jus!

Why This Recipe is Best

French Dip sandwiches are full of tender beef cooked in a rich au jus (wine broth) and served on a crusty french bread with melted cheese.

They are hearty and meaty and flavorful. It’s pretty much sandwich heaven.

While I don’t normally use red wine when making my French Dip, I do like to occasionally use a good dark beer. However, for today’s version, I thought I would try it without alcohol, since so many of you ask for alcohol free recipes!

This is one of my many instant pot recipes that my family makes week after week!

Ingredient Notes

  • Chuck Roast – French dip tends to be made with a cut of meat that’s used in stews and roasts. I prefer chuck roast, but you could also use rump roast.
  • Steak Seasoning – I use McCormick’s steak seasoning mix, but any similar brand will do.
  • Minced Onion – This flavors the meat and the juice but is meant to be small so it melts in, rather than having chunks of onion.
  • Beef Stock – Good quality beef stock will make these sandwiches more flavorful. You can use low-sodium if you prefer.
  • Bread – I love using mini baguettes to slice and make my sandwiches. You can also use a regular baguette and just cut it into whatever lengths you need. A similar crusty style bread that will hold up to the juicy meat would work too.

Easy Instructions

  • Step 1. Prep. Place the roast in the bottom of the pressure cooker. Top with the seasonings and minced onion
  • Step 2. Add liquid. Add beef stock. Secure the lid and move the valve to sealing.
  • Step 3. Pressure cook. Set to pressure cook for 1 hour. Allow to naturally release for 20 minutes, then do a quick release and open the lid.
  • Step 4. Shred. Remove the beef and slice or shred it. Save the liquid and use as au jus for dipping the sandwiches into.

Step 5. Assemble. Assemble the sandwiches by piling the meat onto the baguette or french roll and top with provolone cheese.

Broil if desired and then serve with the au jus for dipping. Enjoy!

Tips and Tricks

  • This makes A LOT of beef, so be ready to serve a crowd.
  • This recipe was tested in a 6-quart Instant Pot. You’ll need to make sure your cut of beef will fit in your Instant Pot.
  • You can swap in 1 cup of red wine or a very dark beer in place of 1 cup of the beef stock to add an extra layer of flavor.
  • You can shred the cooked beef with two forks – it should be very tender and come apart easily – or you can slice it with a knife. Whichever way you prefer!
  • Provolone cheese is classic for these sandwiches, but you could also swap in some cheddar cheese if you prefer.

Can I make French Dip in the slow cooker?

How do I store leftovers?

Leftover French Dip meat, once cooled, can be stored in the refrigerator for up to 4-5 days.
You can even use some of the leftover meat and make yummy French Dip Sliders. The original recipe calls for deli meat, but it’s equally good with the real stuff!

Can I freeze French Dip meat?

Yes, it freezes great! Place the shredded meat, once cooled, along with some au jus sauce in a freezer-safe ziplock bag. Label and date it and freeze for up to 4-5 months. Thaw overnight in the refrigerator.

Cook Time: 1 hour hour 20 minutes minutes

Total Time: 1 hour hour 25 minutes minutes

Servings: 8 sandwiches

Ingredients

  • 4 pound chuck roast
  • 1 teaspoon kosher salt
  • 1 Tablespoon steak seasoning mix
  • 1 ½ teaspoon onion powder
  • 2 teaspoons garlic powder
  • ½ teaspoon black pepper
  • 1 Tablespoon worcestershire sauce
  • 2 Tablespoons minced onion
  • 2 ½ cup beef stock
  • french bread and provolone cheese for sandwiches

Instructions

  • Place roast in bottom of pressure cooker. Top with seasonings and beef stock. Secure lid and move valve to sealing.

  • Start pressure cooker on manual or pressure cook for 60 minutes. Allow to naturally release an additional 20 minutes.

  • Once timer is done, quick release and open lid. Remove beef and slice or shred. Save liquid and use for dipping sandwiches (au jus).

  • To assemble sandwiches, place french dip meat on french roll and top with provolone cheese. If desired, heat under broiler for a few minutes to crisp bread and melt cheese. Dip in au jus and enjoy.
