Growing up, peach cobbler meant one thing and one thing only: camping. Every August, my whole family took a good old fashioned camping trip. Complete with tents, roasted marshmallows, fire pits, and lake swims, it was our annual grand farewell to summer. And it was never complete without my uncle’s peach cobbler. Made over the fire pit in a cast-iron Dutch oven, our go-to camping dessert put s’mores to shame.

It’s been years since our last camping trip, and although I still hold fond memories of those last hurrahs of summer, I’ve started to wonder if I could appreciate them the same way now. Part of me thinks I would just spend the whole time worrying about my phone dying. My apologies to the limitless wonders of the great outdoors, but Twitter comes first.

Fortunately, there’s no rule that says peach cobbler is for campers only. This Flourless Peach Cobbler can be enjoyed from the comfort of your own home, no fire pit required. More of a glamper than a camper? Can’t fathom why anyone would pay to sleep outside? No problem. You can make this super easy peach cobbler from the warmth of your own home, with the convenience of your own oven.

This Flourless Peach Cobbler is a slightly updated version of my uncle’s recipe. My aunt has a gluten-intolerance, so finding gluten-free recipes was always a priority in our family. We’ve gone through various substitutes over the years, but we’ve finally found the best option for gluten-free, low carb baking. This flourless recipe uses coconut flour, almond flour, and ground oats in place of traditional flour.

Whether you’re gluten-free or just cutting carbs, crips and cobblers are some of the easiest recipes to take flourless. There’s not a ton of shape or texture to worry about in these recipes, so the flour swap is pretty easy to pull off. I have crumbled many a gluten-free cake and cookie, but my flourless cobblers are always flawless.

Along with cutting flour, this recipe also cuts sugar. But don’t worry. This dessert stays perfectly sweet with better-for-you alternatives like coconut sugar and honey. Oh, and don’t forget the natural, juicy sweetness of the peaches themselves. My favorite summer fruit, I sometimes enjoy fresh grilled peaches as a dessert all on their own.

Warm spices and rich flavors like cinnamon, nutmeg, and almond extract make this Flourless Peach Cobbler warm and delicious. I always enjoy this sweet summer dessert with a scoop of fat-free frozen yogurt or a dollop of clean whipped cream. Ingredients

US Customary - Metric

For the Peach Filling

  • 5 peaches fresh, peeled, pitted and sliced
  • 3 tablespoons coconut sugar
  • 1 teaspoon coconut flour
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg

For the Cobbler Topping

  • 1/2 cup almond flour
  • 1 cup oats ground fine in a food processor
  • 1 1/2 teaspoons baking powder
  • 1/4 cup almond milk
  • 1 teaspoon almond extract
  • 2 tablespoons honey

Instructions

For the Peach Filling

  • Spray a 9 x 9 inch baking pan with non-stick spray.

  • Place all ingredients in a bowl and toss to coat the peaches in all ingredients. Pour into the prepared baking pan and set aside.

For the Cobbler Topping

  • Preheat oven to 350 degrees.

  • Combine all ingredients and gently stir until just combined. Drop by the spoonful on top of the peaches. Place in the oven and bake 35-45 minutes, or until lightly golden on top. Serve warm.
