If you’ve been around here for any amount of time you will know that I am nothing short of obsessed with my Vitamix – I use it for EVERYTHING! A post I did last year about ten recipes to try in your Vitamixwas pretty popular so I’m back with six more. Yes, these recipes are all considered paleo, but they’re also all delicious, so even if you’re not really “into” that style of eating, I would highly recommend them! Let’s get right to all the yummy recipe goodness with 6 paleo recipes you can put together in a snap with the help of a Vitamix!

  1. DIY Crackers. I know this sounds crazy, but I actually got this idea from the cookbook that came with my Vitamix. Whenever I feel the need for a cracker for hummus or just want a little extra crunch – this is the route I go. I take a handful of nuts (usually almonds or macadamia nuts), an egg and some salt, toss them all in my Vitamix and create a “dough”. You can portion out this dough into pieces, bake them and enjoy! Obviously if you already have almond or coconut flour, just use that!
  2. Cauliflower Rice. Okay, so I’m still mastering this one, but let me tell you – my Vitamix handles the cauli way better than my CuisinArt food processor ever did. I take half a head of cauliflower cleaned, set my Vitamixto one, turn it on and gradually increase the speed until I have half a canister of cauliflower “rice”. Usually I have to use my tamper quite a bit to get everything situated, but once it gets going, the whole process takes about 10 minutes for the entire head.
  3. Applesauce. This one seems pretty straightforward, especially if you’re already making applesauce at home. I don’t like A SINGLE CHUNK of apple in my sauce, so the Vitamix is key for me.In a large pot on the stove, I cook my apples, raw honey, cinnamon and a tiny bit of water and stew them until they are well cooked. Then, just throw everything into your ‘mix and get going! I like to use the smoothie setting, but you can make it as chunky or chunk-free (the way to be) as you like!
  4. Breakfast Hash/Casserole. I discovered this fun idea at Christmas time when I was trying to make about 500 recipes for a party we were hosting all at once and I absolutely did not think I could chop or dice or slice one more solitary thing. I put some sweet potato, peppers, onion, broccoli and garlic into my Vitamix and set it on medium until the vegetables were all pretty well diced up, but not mushy. I poured them into a baking dish, poured egg on top and baked it. It was a hit! Next time I would add a little more seasoning (salt, pepper, paprika — whatever you want, really!), but it was SO GOOD!
  5. Curry. Ever since we went to culinary school in Thailand, I’ve been on a major curry kick. I used to buy the paste at the store, but I went out on a limb, went to a specialty grocer and made my own paste last year and HOLY HECK. Now I just want curry all the time which makes life interesting. Anyway, back to how to make it in your Vitamix. This one is really straight forward. Are you ready? Put cooked/sauteed onions and garlic into your Vitamix, add two tbsp. of curry paste and one can of full fat coconut milk. Blend on the soup setting. IT COMES OUT HOT! YOU CAN EAT IMMEDIATELY. Now, if you want full veggies in your curry, you’ll need to add those in, but the soup setting never gets old for me.
  6. Fruit Sorbet. Just like the soup setting amazes me, so does the frozen desserts setting. Take a can of full fat coconut milk and a handful of any type of frozen fruit you like (mango and strawberry are my favorites) – it just needs to be frozen. Blend on the frozen desserts setting until smooth and serve immediately. That’s it! IF you want it to be slightly sweeter, you can add some raw honey, but usually the fruit is plenty sweet 🙂
